Craving chocolate but want to keep it a little healthier? These Peppermint Black Bean Brownies are fudgy, rich, and packed with protein thanks to the magic of black beans. Don’t knock it ‘til you try it! 😋✨
Peppermint Black Bean Brownies Recipe
Ingredients:

1 (15 oz) can black beans, drained and rinsed
-
3 large eggs
-
1/3 cup melted coconut oil
-
1/4 cup cocoa powder
-
1/2 cup coconut sugar or brown sugar
-
1 tsp vanilla extract
-
1/2 tsp peppermint essential oil (or to taste)
-
1/2 tsp baking powder
-
1/4 tsp salt
-
Optional: 1/4 cup dairy-free chocolate chips
Directions:
-
Preheat oven to 350°F (175°C). Grease or line an 8x8-inch pan with parchment paper.

In a food processor or blender, combine black beans, eggs, and melted coconut oil until smooth.

Add cocoa powder, sugar, vanilla, peppermint oil, baking powder, and salt. Blend again until fully combined.

Stir in chocolate chips if using.

Pour batter into prepared pan and smooth the top.

Bake for 20-25 minutes, until a toothpick comes out mostly clean.

Let cool before slicing.
