Ginger Citrus Muffins
(made with wild orange and green mandarin essential oils)
INGREDIENTS
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1/3 cup sunflower oil
- 1 egg, lightly beaten
- 3 drops green mandarin essential oil
- 3 drops wild orange essential oil
- 2 tbsp crystallized ginger, finely chopped
INSTRUCTIONS
- Preheat oven to 400°F. Line a muffin tin with 12 baking cups.
- In a large bowl, combine the dry ingredients (flour, sugar, baking powder, salt.) Add crystallized ginger and toss to coat.
- Lightly beat egg and add to milk. Add the 3 drops each or wild orange and green mandarin essential oils to sunflower oil. Stir to incorporate. Add to milk mixture.
- Add liquid ingredients to dry ingredients all at once, and mix with a fork until moist. Be careful not to overmix. A few lumps are okay.
- Spoon batter into the baking cups. Fill to about 2/3 full.
- Bake in the oven for 15-20 minutes or until tops are golden and a toothpick inserted in the center of muffin comes out clean.
- Allow to cool for a few minutes before serving.
- Serve with room temperature butter.
