Ginger Citrus Muffins

(made with wild orange and green mandarin essential oils)

INGREDIENTS
  

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/3 cup sunflower oil
  • 1 egg, lightly beaten
  • 3 drops green mandarin essential oil
  • 3 drops wild orange essential oil
  • 2 tbsp crystallized ginger, finely chopped

INSTRUCTIONS
 

  • Preheat oven to 400°F. Line a muffin tin with 12 baking cups. 
  • In a large bowl, combine the dry ingredients (flour, sugar, baking powder, salt.) Add crystallized ginger and toss to coat.
  • Lightly beat egg and add to milk. Add the 3 drops each or wild orange and green mandarin essential oils to sunflower oil. Stir to incorporate. Add to milk mixture.
  • Add liquid ingredients to dry ingredients all at once, and mix with a fork until moist. Be careful not to overmix. A few lumps are okay.
  • Spoon batter into the baking cups. Fill to about 2/3 full.
  • Bake in the oven for 15-20 minutes or until tops are golden and a toothpick inserted in the center of muffin comes out clean.
  • Allow to cool for a few minutes before serving.
  • Serve with room temperature butter.
